Baked Cajun Red Snapper
ingredients
3 pounds whole red snapper, scaled, gutted and rinsed in cold water
6 cloves garlic, crushed
4 whole green onion stalks
1 cup green onions, chopped (green tops, included)
1 cup celery, finely chopped
3 tablespoons butter or margarine
Cajun seasoning, to taste
paprika
fresh parsley, chopped, as a garnish

3 pounds whole red snapper, scaled, gutted and rinsed in cold water

1 cup celery, finely chopped
3 tablespoons butter or margarine
Cajun seasoning, to taste
paprika
fresh parsley, chopped, as a garnish
Cover red snapper completely with Cajun seasoning,
then sprinkle with paprika and rub in well.
Saute chopped green onions and celery in until just tender,
then stuff cavity of fish with mixture.
Bake snapper at 425 degrees F for 45-50 minutes;
remove from oven and garnish with whole green onion stalks
and parsley.
Serve immediately.
