Fish In Ginger Sauce
ingredients
1/2 cup soy sauce
2 tablespoons Szechuan stir-fry sauce
3 tablespoons sugar or sugar substitute
1/4 teaspoon garlic powder
2 tablespoons minced fresh ginger, more if desired
2/3 cup water
1 1/2 pound small fish fillets
1/2 cup fried fish breading
1/3 cup vegetable oil
2 large green onions, chopped
directions
Fillets should be wet.
In a small bowl mix the first six ingredients. Heat vegetable oil in large skillet over medium high heat. Put breading in gallon plastic bag, add fish to bag and shake to coat. Put the breaded fillets onto clean plate
Add fillets to hot oil and fry for one minute until lightly browned. Turn over fillets and brown on other side for another minute. Turn heat down to medium and pour soy sauce mixture over fillets. Turn fish over one last time to coat with soy sauce mixture. Cover pan and let fillets simmer 3 minutes (up to 5 minutes for larger fillets).
Transfer fillets to serving platter and drizzle sauce over top. Sprinkle green onions over the top.
